Maturation in Australian fortified wine (apera) casks, alongside European and American oak casks, brings depth to this Sydney-made expression. Coastal maritime air provides the setting for a single malt that puts Australian ingredients at its heart.
Tasting Notes
- Nose: Slow-roasted pecan, chocolate praline, blackberry compote, and wood-fired figs, lifted by dried mango and clove honey.
- Palate: Plum jam, roasted chestnuts, homemade toffee, ripe pineapple, and browned butter.
- Finish: Dark chocolate with sea salt, sticky meringue, marzipan, and vibrant tropical fruit.
